Wait, there's more.....the chicken is wrapped in bacon (talk about mouth watering) Healthy food is great but so is stuffed, comfort food. Who can argue with cream cheese??
My husband and I have been trying to grill more since he purchased his Pit Boss Grill/Smoker. For us, it's not just about grilling hamburgers and hotdogs but to find other variations and new ideas.
Anyways, let's get to the recipe because you are going to love it!
Chicken Breasts (approx 2lbs)
8oz cream cheese
1 tbsp salt
1 tbsp pepper
1 drop Marjoram essential oil
1 tsp garlic powder
1 tbsp onion powder
Mix all of the ingredients together. I used a stand mixer to save time. Also, keep in mind that I did not season my chicken so that is why I chose to add more to the filling.
Using a knife, make slits in the thicker part of the breast.
Fill the pocket that you created with one spoonful of cream cheese at a time until full. This is all about preference as to how much you add to each chicken breast.
Wrap the slices of bacon around your chicken, using toothpicks if needed to help adhere the bacon to the chicken.
Cook on the grill at 350 degrees until thickest part of breast is at least 165 degrees Fahrenheit. For this grill it was about 45 minutes total in cooking time.
Asparagus
Two bunches of asparagus
Drizzle olive oil (this is to coat the asparagus but not overly saturated)
Worcestershire sauce (again, enough to coat it)
1 tsp garlic powder
1 tsp onion powder
A few drops of Lemon essential oil-if you do not have essential oils then use two tbsp lemon juice
1 tsp mustard powder
1 tsp dry Sage
1 tbsp salt
1 tbsp pepper
Add all ingredients to a bowl and toss in asparagus. Lay pieces of asparagus on the grill at an angle to avoid falling between the grates of the grill. Personally, I like asparagus to be soft and slightly charred. These were on the grill for 30 minutes.
