#barbecuechickenpizza sounds delicious on so may levels! But, what about leftover chicken thighs thrown onto pizza? This recipe was started as an idea to use leftover chicken thighs that my family did not want to eat any longer. I scrounged around the kitchen thinking of what I could do and I do not regret this.
pizza dough-1/4 cup butter (softened), 1tbsp baking powder, 1 cup milk, 1/4 tsp salt, 2 and 1/4 cup all purpose flour.
toppings- 2 leftover chicken thighs, 1 cup barbecue sauce of choice, 4oz cream cheese, 1 cup cheddar cheese, 1/4 tsp black pepper, 1/2 of a shallot and optional; jalapeños.
I put all of the ingredients of the dough in my Kitchenaid mixer and let it do the rest of my work. Place on a floured service, approximately 10 inches in diameter.
Line a baking sheet with aluminum foil, drizzle organic olive oil on the baking sheet, and a little on the dough. I added the chicken first, followed by barbecue sauce, cheddar cheese, cream cheese, raw shallots, salt, pepper and jalapeños to one half of the pizza. Roll the ends of the dough up depending on how much crust you like.
Bake in the oven at 400 degrees for 30 minutes or until crust is golden brown.
